Officially one week into quarantine which means another week of not being able to go out and buy food from restaurants. Being stuck inside has taught me how to make more foods though. Since I am mexican we eat a lot of mexican foods. One of the foods that we make often when we can’t go out is called chile colorado or in other words red chile. It’s made with cut up pork that gets cooked in a pan with oil and all the different seasonings that you prefer on top. You then put the red dry chiles in another pan full of water and let them sit on the stove on a medium to high heat until they are soft. Once doing so you take them off and put them into a blender with salt and some chicken bouillon seasoning and blend. The next step is to grab a strainer and the chile and pour the chile into the strainer over the pork that is done cooking. Doing these steps helps so that the seeds from the chile do not go into the pork. Tada!! That’s it, that’s all there is to it. You can heat up some flour tortillas and you have yourself an authentic mexican dish served for dinner.
